I adapt my method to the student's interests, skill level, and motivation to seek lessons to become a better cook. The most important skill one can possess in the kitchen is patience, so this is the core focus of any lesson. The second is that we will inevitably burn, miss a crucial ingredient, or otherwise make mistakes that could 'ruin' a dish, so an important aspect of my methodology is to teach you how to anticipate, prevent, mitigate, and otherwise embrace disaster.
I cooked in professional kitchens, prepared a variety of sausages and charcuterie for artisanal butcher shops and restaurants, and continue to practice in my home kitchen every day.
